Miguel Ángel 30be253601 ci: render soak under load catches render races an idle runner misses ...

Renders the CLI smoke project 10 times with every core busy, and a counter
fixture twice losslessly (frame hashes must match, no repeated frames). Runs
when render capture or the CLI render path changes, and nightly on main; the
required regression check fails when it does.
Also pins the docs mint CLI so a Mintlify publish in progress can't fail it.
